Analysis of Phytochemical, Minerals And Fatty Acid Profile of Artocarpusheterophyllus L. (Jackfruit) Seed

Abstract

This study was aimed at determining the phytochemical,minerals and fatty acid profile of Artocarpusheterophyllusseed. The phytochemical analysis was carried out using High performance liquid Chromatography (HPLC). The fatty acid analysis was conducted with a Hewlett-Packard (Palo Alto, CA) model 5890 Series 2 plus gas chromatograph.  The mineral composition of the jackfruit seeds were analyzed by Inductively Coupled Plasma Atomic Emission Spectrometry. The results recorded the phytochemicals and their concentrations (mg/100g) as alkaloids (35.63), flavonoids (29.34), tannins (44.33), cardiac glycosides (23.62), phenolics (149.09), terpenes (25.48) and steroids (21.54). The phenolics content was higher than other parameters while steroids were the least in the seed. The jack fruit seed s contains appreciable amounts of sodium (37.52mg/ g), potassium (122.72mg/ g), calcium (241.37mg/g), magnesium (85.63mg/ g), sulphur (0.12mg/g) phosphorus (117.08mg/g),  iron (5.93mg/ g), zinc (7.32 mg/g)  copper (17.17mg/g), manganese (20.05mg/g) and  chromium  (0.43mg/g), The results showed that calcium has the highest concentration while sulphur has the lowest concentration in Artocarpusheterophyllusseed. In the lipid profile, it contains C10:0 (Capric) 3.78mg/100g, C12:0 (Lauric) 9.93mg/100g, C14:0 (Myristic) 6.56mg/100g, C16:0 (Palmitic) 22.73mg/100g, C18:0 (Stearic) 18.83mg/100g, C18:1 (Oleic) 20.87mg/100g, C18:2 (Linoleic) 39.65mg/100g and C20:0 (Arachidic) 5.96mg/100g. Among which, C18:2 (Linoleic) was found at the highest quantity (39.65mg/100g) and (Capric) found to be lowest quantity (3.78/100g). In conclusion, Jackfruit seeds can be consumed as a good source of nutritional, mineral, antimicrobial, antioxidant, antiulcer, anti- inflammatory, antioxidant, antitumor, antispasmodic, and antidepressant activities components and it has potentials for value addition and neutraceutical developments.
